Does each staff member connect their own Microsoft 365 calendar?

Yes. Each person signs in with their own Microsoft account from the Calendar screen, and the connection is saved against their BytePhase login. A technician sees their own Outlook events next to the jobs and tasks BytePhase schedules for them, and connecting or disconnecting one person’s calendar does not touch anyone else’s.
